Stilton and Walnuts
Yes, a match made in heaven
You can't just eat one!
These are a bit of a treat. I adapted them from a plain cheddar recipe I found online here (https://www.bakingmad.com/cheese-and-walnut-biscuits-recipe). I was looking for something for Christmas that wasn't more sweet food as there are only so many mincemeat filled snacks I can manage. These are so easy to make and have gone down a treat with those that have tried them for me. This makes about eight biscuits, the quantities are easy to increase if you want to make more.
60g salted butter (cut into cubes)
60g strong white flour (bread flour is best)
60g walnuts (bashed into small bits)
60g cheddar cheese (grated)
60g stilton cheese (crumbled)
2 tsp mustard powder
Black pepper
Sesame seeds
Poppy seeds
Add the mustard power and a shake of black pepper to the flour and mix well.
Rub together the butter and the flour mix until it sort of clumps. It's sort of like you are making scones when it would go all breadcrumb-like but you are using more butter so it'll be a bit more of a clumpy consistency. If it seems too 'wet' then add a tiny bit more flour but be careful as if they get too dry they won't hold together. If you do go a bit far a little splash of milk should set it right.
Bash up the walnuts until they are in small-ish pieces (you still want to be able to tell what they are so not too small) and then add them to the mix.
Add in the cheddar and stilton and mix well bringing it all together into a slightly sticky dough. Then make it into a sausage shape.
Put the sesame seeds onto a chopping board and then roll the dough sausage in them. You want it to be covered along the whole outside with the seeds.
Cut the sausage into biscuits, it should make about 6-8 depending on how fat you have made your sausage.
Sprinkle the poppy seeds on the top of the biscuits.
Place on a greased baking tray (I use a tiny bit of olive oil).
Bake in pre-heated oven at 180c (fan oven) for 10-12 minutes or until they are golden on top.
Leave to cool for a few minutes on the tray and then transfer to a cooling rack. They are really nice warm but great cold too.
