Chilli beef salad,
Fresh and zingy salsa, yum,
It's really healthy!
I'm on a bit of a health drive. I stood on the scales today and let's just say it's not pretty! Rather than do a silly fad diet however I am trying to teach myself new things to make that are tasty, but low in calories. This is my first day's go. It is really nice and very filling. I've been really busy today reorganising my kitchen and was starving when I made this but I am now nice and full.
This recipe serves 2 people. If you want to stay in the calories be sure to stick to the quantities below.
Chilli beef salad - 450 calories ( closer to 500 if you use normal olive oil)
Salsa - 30 calories
Guacamole - 120 calories
Chilli Beef:
Spray olive oil (the low cal spray stuff) - or if you don't mind it being a bit higher calorie some chilli olive oil (it does taste better with this)
250g very lean mince beef
3/4 red onion (chopped small) - you use 1/4 in the salsa
2 garlic cloves (chopped small)
3/4 big fresh red chilli (chopped small) - you use 1/4 in the salsa
3 tsp cumin seeds
2 tsp ground coriander
1 tsp smoked paprika
1 tsp rose paprika
2 tbsp tomato paste
1 tsp cocoa
1/2 tsp brown sugar
150ml beef stock
Squeeze of lime juice
Chopped fresh coriander
Brown the mince and onions with the chilli and garlic.
Add in the cumin, ground coriander, paprika (both), cocoa and brown sugar and cook for a few minutes
Add in the tomato paste and beef stock and simmer for about 10-15 minutes
Before serving squeeze in some lime juice to taste and add the fresh coriander again to taste (I like loads)
This chilli is quite mild so if you want it with a bit more fire you can add another fresh chilli (green would be good for some contrast, or some cayenne pepper to taste)
Salad:
2 baby gem lettuce
8 baby tomatoes
1/2 cucumber
Arrange the leaves around the edge of the bowl and then chop the tomatoes and cucumber and place on the leaves, leave the center of the bowl free for the chilli.
Salsa:
10 baby tomatoes (chopped small)
1/4 red onion (chopped small)
Chopped fresh coriander
1 garlic clove (chopped small)
1/2 tsp garlic salt
1/2 tsp pepper
Squeeze of lime juice
Just chop it all up and add it into a bowl. Give it a good mix and you're done! Season to taste with the garlic salt and pepper, I've just put above what I used.
Guacamole
1 avocado (ripe)
Squeeze of lemon juice
1/2 tsp garlic salt
1/4 tsp cayenne pepper
Black pepper
Mash up the avocado and add in the other ingredients to taste, done!
Once you are done with the above just assemble the salad. The leaves etc and all done already in the bowl (as above). Spoon in your chilli beef and then add the salsa and guacamole on the side.
We had this with a couple of slices of warm ciabatta bread
