Thai Style ChickenThai food is tasty, It's also quite good for you, Love this dish so much My Mum used to cook this for me as a kid. I have no idea how authentic it is but I have always loved it. We called it goo chicken, because the sauce (goo) is the best bit. It's best made in the morning for the evening. This is my version of my Mum's recipie, I' m not sure if i get it quite right (her goo stays thicker), but it tastes good. This is for 2 people. 2 big chicken breasts 1 tub coconut cream (you can buy it ready-made in Sainsburys) 1 red chilli (de-seeded and sliced) 1 green chilli (de-seeded and sliced) 3 big garlic cloves (sliced) 1/2 lime - juice 1 lime - zest 2 tbsp soy sauce 2 tsp fish sauce Lots of fresh corriander Combine all the ingredients for the goo (everything except the corriander). Slice gashes in the chicken breasts to about 1/3 way through. Marinade the chicken breasts for the day (or at least a few hours). Remove chicken breasts from marinade and cook on 190c for 25-30 mins (or until cooked through),baste with some more marinade about half way through. Heat up the goo and boil for a while until it reduces a little bit (but not too much), add in most of the corriander just before serving (save enough to sprinkle some on the top at the end). Cut chicken into slices and serve with rice with goo poured on top, garnish with corriander. Done, enjoy!! |
