Such a great combination
Curried veg is great!
What you need (this serves four) -
Curry:
* 6 small potatoes (halved, skins on)
* 2 small sweet potatoes
* 2 small red onions
* Handful of green beans
* 1 Green Pepper
* 2 tbsp coconut oil
* 4 tsp turmeric
* 6 tsp ground cumin
* 8 tsp ground coriander
* 2 tsp chilli paste
* 1 red chilli (sliced small)
* Salt
* Black pepper
* 5 garlic cloves (chopped fine)
* 5 cm grated ginger
* 4 tsp tamarind paste (dissolved in some hot water)
* 2 tsp palm sugar
* 1 can coconut milk
Dissolve the tamarind paste in the hot water and set aside for later.
Heat the coconut oil and add the onions, cook for a few minutes and then add the sweet potatoes and small potatoes and coat everything well with the coconut oil.
Add in the turmeric, cumin, coriander, chilli paste, red chilli, garlic and ginger and fry for a few minutes until fragrant.
Add in the palm sugar, coconut milk and tamarind water and stir well. Bring to the boil then add in the green peppers and green beans. Season with salt and pepper to taste.
When boiling take off the hob and put in the oven at 180c for about an hour (or as long as it takes for the potatoes to be really soft). Don't put a lid on it as you want the sauce to thicken up
Salmon:
* 4 salmon steaks
* Thai 7 spice (you can buy it pre-made)
* Soy sauce
* Salt and pepper
Line a baking tray with foil . Dust the top of the salmon with 7 spice mix and pour a small amount of soy sauce on top. Turn the salmon over and sprinkle the skin with salt and pepper.
Bake in the oven at 180c for about 20-25 minutes or until cooked through
Rice:
* Basmati Rice
* Turmeric
Boil rice as normal but with some turmeric in the water to make it yellow
Garnish:
* 2 Red chillis (sliced)
* 4 spring onions (sliced)
* Fresh coriander
To serve:
You need a nice deep bowl like the one in the picture (these are from Sainsburys)
Add in the rice, spoon on the curry (the sauce should have gone nice and thick)
Put the salmon on top and then garnish
