Salmon is tasty, Fish is my favorite food, Cajun spices, yum! This one is super easy and makes a great light dinner. You could do a mini one for a lunch too. The salmon and potatoes need to be warm to make it work perfectly. If you can marinade the salmon first then great, but it's no big deal if not. I used dried dill because I didn't have any fresh, it would be even nicer with fresh I think. Serves 2 (could do 4 for lunch): You'll need: 2 big salmon fillets (skinless) Juice of 1/2 a lemon Cajun spice mix (see below) 12 (ish) salad potatoes 1 big fresh red chili (finely chopped) 4 spring onions 2 tomatoes Watercress Sweet pea shoots Dried dill Butter Garlic olive oil Cajun spice mix: 2 tsp ground cumin 4 tsp smoked paprika 2 tsp dried coriander leaf 1 tsp chilli powder 3 tsp soft brown sugar Dressing: 1 tbsp dried dill 2 tsp smoked paprika 1/2 tsp cayenne pepper 150ml natural yoghurt 1 tbsp extra virgin olive oil 1 tbsp cider vinegar Sea salt and black pepper Make up the spice mix, you might not need it all, it will keep fine for ages in a sealed tub. Put the potatoes on to boil in some salted water. When they are cooked drain and toss in some butter and dill, set aside covered so they stay warm. Cut the salmon up into big chunks and squeeze over the lemon juice. Then sprinkle over the spice mix, make sure you get both sides of the fish. Stick in the fridge to marinade if you have time, don't worry if not. Heat some olive oil in a frying pan and cook the salmon on both sides for a few minutes until just cooked through (don't overcook salmon, it's much tastier when it's still nice and moist) Arrange your salad. Sweet pea shoots and watercress are a great combo, but you can use any leaves you like. If you don't like fresh chili you can miss this out. I think it adds a nice kick though. I forgot to put in cucumber, it would be nice if you like it to add it in. You could use any salad stuff really, this was just what I had in the fridge. Chop the potatoes in half and add to the salad, then add the salmon when it's cooked. The dressing can be made at any point. Just mix everything together and season to taste with salt and pepper. If you don't have cider vinegar you could use white wine vinegar instead. (It'll keep for a few days in the fridge and is very nice in a chicken sandwich or to dunk chips in!) Serve! |
