Cullen Skink is my ultimate comfort food. It reminds me of being a little kid. When we lived in Scotland my mum used to make it as a weekend treat, we used to walk to the shore to buy the fish and take our dog Henry along. There was a climbing frame shaped like a car that I got to play on and we HAD to walk past the old sweet shop on the way home. It brings back very happy childhood memories for me, so if I'm feeling a little blue or homesick it's the perfect food to cheer me up. It's a wonderfully simple dish, the fresher the fish you can get the better!

- I knob of butter
- 1 small onion
- 2 small potatoes, peeled and cut into 1cm cubes
- 250g smoked haddock (uncoloured is better if you can get it)
- 250ml whole milk
- salt and pepper to taste
- 2 tablespoons finely chopped parsley or chives
